  {"id":149952,"date":"2016-04-07T13:42:11","date_gmt":"2016-04-07T17:42:11","guid":{"rendered":"http:\/\/www.rochester.edu\/newscenter\/?p=149952"},"modified":"2016-04-14T08:59:26","modified_gmt":"2016-04-14T12:59:26","slug":"local-foods-week-highlights-sustainable-dining-programs","status":"publish","type":"post","link":"https:\/\/www.rochester.edu\/newscenter\/local-foods-week-highlights-sustainable-dining-programs\/","title":{"rendered":"Local Foods Week highlights sustainable dining programs"},"content":{"rendered":"<p>In 2007, it was 11 percent, but today more than 56 percent of everything served and sold on campus is grown, raised, processed, or wholly manufactured within New York State, according to Cam Schauf, director of Campus Dining Services and Auxiliary Operations.<\/p>\n<p>And during Dining Services\u2019 annual Local Foods Week, April 11-15, this pledge to local products is taken even further to highlight local vendors with special meals, samplings, events and more.<\/p>\n<p>Local Foods Week Schedule:<\/p>\n<ul>\n<li><strong>Monday, April 11<\/strong>\n<ul>\n<li>Local Lunch @ Eastman Dining<\/li>\n<li>Local Meatless Monday Dinner @ Douglass<\/li>\n<\/ul>\n<\/li>\n<li><strong>Tuesday, April 12<\/strong>\n<ul>\n<li>Spotlight on Local Partners: California Rollin\u2019 @ The Commons, 11am-1pm<\/li>\n<li>Meliora Beer Pairing Dinner with Nedloh Brewery, of Bloomfield, N.Y.<\/li>\n<\/ul>\n<\/li>\n<li><strong>Wednesday, April 13<\/strong>\n<ul>\n<li>Iron Chef Local Challenge with Spoon U Lunch @ Danforth, 11am-1:30pm<\/li>\n<li>Spotlight on Local Partners@ Connections<\/li>\n<li>Team Green \u201cBee Day\u201d<\/li>\n<\/ul>\n<\/li>\n<li><strong>Thursday, April 14<\/strong>\n<ul>\n<li>Local Vendor Fair @ Eastman, 11:30am-1pm<\/li>\n<li>Spotlight on Local Partners @ Hillside POD featuring Upstate Farms<\/li>\n<\/ul>\n<\/li>\n<li><strong>Friday, April 15 <\/strong>\n<ul>\n<li>Club Rochester Tent @ Meliora Quad, 2:00pm-7:30pm (Danforth will close at 1:30pm)<\/li>\n<li>Lunch &amp; Dinner Street Food Specials featuring Mel Plates @ Douglass<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Another commitment to the University\u2019s sustainable dining and purchasing programs was made this past February when Dining Services announced that by June 2016, all chicken served on River Campus and at the Eastman School of Music will be antibiotic free.<\/p>\n<p>\u201cThe move to antibiotic-free chicken complements the University\u2019s dedication to sustainability, as well as to purchasing and operating practices that are ecologically sound, socially just and economically viable,\u201d said Schauf, who also serves as co-chair of the University Council on Sustainability.<\/p>\n<p>Antibiotic-free products are a livestock industry alternative where healthy animals are not given daily antibiotics. The University is also exploring the impact and availability of sustainable (including antibiotic-free) pork and beef.<\/p>\n<p>Currently, all of the dining center and food court salad bars and grill stations on River Campus and at Eastman serve antibiotic-free chicken. Additionally, the dining services at the Medical Center\u2014Caf\u00e9 601, the new Metro Deli Caf\u00e9, patient dining, and catering departments\u2014have plans to switch to all antibiotic-free
