Heat it for 10 to 15 minutes or until the internal temperature reaches 500 degrees. Reduce the heat to medium and keep lid closed.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Season<\/strong> burgers well with salt and pepper.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Drizzle<\/strong> pineapple rings with oil, salt, pepper, and Tajin. Place the pineapple<br \/>\nrings onto grill and get some good marks on each side (about 2 minutes per side).<br \/>\nWhen done, set aside.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Place<\/strong> brioche rolls on grill. These will burn quickly, so just get some marks<br \/>\non them (1-2 minutes). When done, set aside.<\/span><\/p>\n<p><span style=\"color: #15234a;\">Place burgers on grill and shut the lid. Cook the first side for 3-4 minutes. Flip burgers, shut lid, and cook for 2 more minutes.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Open lid<\/strong> and place one pineapple ring on each burger, 4 jalapeno rings, and one<br \/>\nslice of cheese. Shut lid again and cook for 2-3 more minutes or until cheese is<br \/>\nnice and melted. Remove from grill and let rest for 3 minutes.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Assemble burger and enjoy!<\/strong>[\/vc_column_text][vc_empty_space height=&#8221;25px&#8221; image_repeat=&#8221;no-repeat&#8221;][\/vc_column][vc_column width=&#8221;1\/3&#8243;][vc_empty_space height=&#8221;5px&#8221; image_repeat=&#8221;no-repeat&#8221;][vc_column_text]<\/span><\/p>\n<h3>Grilled Tajin Vegetables<\/h3>\n<p><strong>Serves 10<\/strong><br \/>\n<span style=\"color: #15234a;\">1 pound garlic scapes<br \/>\n4 red onions, sliced into large wedges<br \/>\n4 red peppers, sliced thick<br \/>\n4 green peppers, sliced thick<br \/>\n4 yellow peppers, sliced thick<br \/>\n3 zucchini, sliced into<br \/>\nmedium-sized rounds<br \/>\n4 yellow squash, sliced into<br \/>\nmedium-sized rounds<br \/>\n1 pound button mushrooms,<br \/>\ncleaned and quartered<br \/>\n1 1\/2 cups feta cheese<br \/>\n1\/2 cup scallions, sliced<br \/>\n1 cup olive oil<br \/>\n3 tablespoons Tajin (or chili lime spice)<br \/>\n1 1\/2 tablespoons salt<br \/>\n3\/4 teaspoon cracked pepper<br \/>\n2 pinches salt<br \/>\n2 cups Mel Sauce<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Turn grill to high<\/strong> and close lid. Heat it for 10 to 15 minutes or until the internal temperature reaches 500 degrees. Reduce the heat to medium and keep lid closed. If you want to use vegetable baskets, place them on the grill while it preheats.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Place<\/strong> all the prepared vegetables in a large bowl. Drizzle with oil and Tajin. Toss thoroughly so oil and spice are evenly distributed.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Place<\/strong> vegetables directly on grill or in baskets. Shut grill lid and cook for 5-7 minutes.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Open grill lid<\/strong> and stir vegetables (they should be getting charred and soft). Taste to check for doneness. If too raw or not charred enough, close and cook for a few more minutes.<\/span><\/p>\n<p><span style=\"color: #15234a;\"><strong>Remove<\/strong> vegetables from grill and place in bowl. Crumble feta onto vegetables and add scallions. Toss everything together then place on a serving platter. Add salt to taste.
